French Toast & Berry Coulis

  • 4 eggs
  • 1/4 cup low fat milk
  • 1 teaspoon vanilla
  • 8 thick slices of bread
  • 3 tablespoon monounsaturated margarine
  • 2 x 250g punnets of raspberries
  • 1/4 cup icing sugar for sifting


Purée 1 punnet raspberries to make coulis. Set aside. Whish eggs, milk & vanilla together & pour into shallow dish. Dip bread into egg mixture, coat well and fry in melted margarine until lightly browned, turn and cook other side. Serve 2 slices on each plate, topped with fresh raspberries and raspberry coulis. Sprinkle with icing sugar and serve.
