Kuku Sabzi (Persian Herb Frittata)

This frittata is mind-blowingly delicious.

Kuku Sabzi is a style of frittata unlike anything you’ve ever tasted. The Great Australian Bake Off veteran, Hoda Alzubaidi gives us her contemporary spin on the traditional Persian dish, packed with vibrant greens and flavourful turmeric. With each forkful, you'll savour the richness of fresh eggs mingling with the earthy goodness of herbs like parsley, cilantro, and dill. Whether served warm or at room temperature, Kuku Sabzi is a feast for the senses that promises to leave you craving more!

Ingredients

  • Bunch parsley 
  • Bunch coriander (cilantro) 
  • Bunch dill 
  • ½ leek 
  • 4 eggs 
  • ¼ cup pistachios 
  • 1 teaspoon turmeric 
  • ½ teaspoon salt 
  • ½ teaspoon pepper 
  • ½ teaspoon baking powder 
  • 3 tablespoons olive oil 

Method

  1. Finely chop all the parsley, coriander, dill and leek and add to a large bowl.
  2. Add 4 large eggs, chopped pistachios and all the seasonings. Mix well with a spoon. 
  3. Add the olive oil to a pan or skillet and pour the mixture evenly. Cover and cook over low heat for 3-5 minutes. For an even bake, transfer onto a plate and cook the other side for another 2 minutes. 
  4. Serve warm or cold with a serving of yogurt and pistachios.
