Savoury Masala French Toast

Savoury Masala French Toast

Need to spice up your morning routine? This Masala French Toast by Today Show cook, Jane de Graaff might be just what you need.

 

This fusion of spices and flavours redefines the concept of French Toast in new and inspiring ways. Brioche bread drops little notes of sweetness against a diverse palate of coriander, chilli and more. Don’t limit this one to breakfast, a slice of this French toast will get you going at lunch and dinner too.

Ingredients

  • 3 eggs (+ 2 extra for optional topping)
  • 4 slices of brioche bread
  • ¼  teaspoon each coriander powder, cumin powder, chilli powder
  • Pinch salt
  • ½ red onion, diced
  • ¼ cup fresh coriander, picked from stalks
  • 2 tablespoons chives, finely chopped
  • 2 tablespoons coconut milk 
  • ½ tablespoon each fresh green and red chillies, finely sliced, seeds removed
  • 2 tablespoons butter, for pan frying
  • ½ cup shredded mixed cheese (with mozzarella included)

Method

  1. Finely slice and dice your onions, chives, coriander and chillies.
  2. In a large, flat bowl lightly whisk your 3 eggs, then add the coconut milk, fresh herbs, onion and spices and whisk again.
  3. Heat a frying pan to medium heat, and add ¼ of your butter to the pan.
  4. When it is sizzling, dip a piece of your bread into the egg mix on both sides (making sure a lot of the herbs stick) and then drop it into the pan. Cook for 1 minute, flip and top with ¼ of the cheese.
  5. Place the lid on the pan to steam and melt the cheese for 1-2 minutes. Remove to a plate and keep warm.
  6. Repeat until all slices of bread are used.
  7. (Optional) Tip the last of the egg mix into the pan and crack the two extra eggs into it to fry.
  8. Serve the Masala French Toast with the extra fried eggs on top and extra sliced chillies and herbs.
