Foolproof Coconut Flan

Foolproof Coconut Flan

Ingredients

  • ½ cup white sugar
  • 5 eggs
  • 1 x 320g can of sweetened condensed coconut milk
  • 1 x 400ml can of coconut cream

 

 

Method

  1. Place a large steamer on to boil and select a large shallow dish that will fit inside the steamer comfortably.
  2. In small pan over medium heat add sugar and slowly melt, swirling, until the sugar melts and turns a golden colour - be careful not to burn.
  3. Carefully pour the melted sugar into your serving dish and swirl to create an even layer on the bottom. Set aside to cool.
  4. In a large blender cup or bowl add eggs, condensed milk and coconut milk, blend with stick mixer until combined, or whisk with a fork then strain through a sieve to ensure a smooth mix.
  5. Place your dish with caramel into the steamer, then pour the coconut custard on top of the hardened caramel. Place the lid on the steamer then steam on medium heat for about 30 minutes, checking after 20. The center should still be a little wobbly but not runny.
  6. Remove from heat and cool in the fridge for at least a few hours or overnight. To serve, run a knife around the edge of the flan then turn out onto a plate and slice.
