Got leftover rice in the fridge? Turn it into dinner. This Crispy Rice & Spring Onion Omelette pan-fries rice in sesame and chilli oil, tucks it under a fluffy egg layer, then finishes with furikake and Japanese mayo. It’s quick, budget-friendly and perfect for breakfast, lunch or dinner.

  1. Whisk two of the eggs in a jug. Heat a 24cm (top measure, base 19cm) non-stick frying pan over a medium-low heat.
  2. Drizzle half of the sesame and chilli oil over base of pan. Add 2⁄3 cup of the rice to pan. Use a heatproof spatula to mix rice with oils for 1 minute until grains are separated and coated with oils. Flatten rice over base of pan.
  3. Pour eggs over rice; tilt pan slightly to allow egg to cover rice completely. Sprinkle with half of the furikake and half the onion. Cook for 3-4 minutes until mostly set on top.
  4. Fold omelette over in pan and slide onto plate. Cover to keep warm. Repeat to make the second omelette.
  5. Drizzle omelettes with mayonnaise and extra chilli oil. Sprinkle with extra furikake and slithered onion. Serve.

Notes

  • To make a dairy-free mayonnaise dressing, blend 1 hard-boiled egg, ¼ cup olive oil, ¼ cup red wine vinegar, 2 tsp honey and 2 tsp Dijon mustard using a stick blender or mini food processor.
  • You can use finely grated Parmesan cheese instead of furikake seasoning.
  • You can also use any variety of cooked rice or use a 125g microwave cup of rice, heated and separated before use.
  • Find Furikake nori rice seasoning in major supermarkets.
  • For a more substantial, high-quality protein-packed meal, add an extra egg to each omelette.
