Soft, milky and wonderfully moist, this Matcha Tres Leches Cake is made for sharing. Prepare it ahead so the matcha milk soak has time to work its magic, then finish with whipped cream and raspberries before serving.

  1. Preheat oven to 180C fan forced. Grease and line both sides of a 23cm square cake tin with baking paper.
  2. Place egg yolks and sugar in the bowl of an electric mixer. Beat for 5 minutes until thick, pale and creamy.
  3. Beat in milk and zest until combined. Transfer to a large bowl.
  4. Sift flour, matcha and baking powder into egg mixture and use a whisk to gently stir in until smooth.
  5. Whisk egg whites in clean bowl of electric mixer until soft peaks form, being careful not to overbeat.
  6. Gently fold egg whites in two batches until each batch has just combined. Pour into prepared tin. Bake for about 25-30 minutes or until a skewer comes out clean when tested. Remove and stand for 10 minutes.
  7. To make the matcha milk soak, put evaporated milk in a heatproof glass bowl or jug. Microwave on high for 1-2 minutes until warm. Whisk in matcha until dissolved. Whisk in condensed milk.
  8. Poke lots of holes all over the top of the cooked cake with a skewer. Reserve 1 cup of the milk soak for serving. Pour half of the milk soak over the top of cake and allow it to soak in for 10 minutes. Pour over the remaining and allow to absorb for 2 hours or overnight.
  9. When ready to serve, lift cake from tin, remove paper and place on a serving board.
  10. Swirl whipped cream on top of the cake. Decorate with a light dusting of matcha and arrange raspberries on top. Drizzle with some of the milk soak just before serving. Serve cut into squares and serve with remaining milk soak in a jug.

Notes

  • Matcha has an earthy flavour, which also pairs well with vanilla or ginger. Substitute lemon zest for 2 tbsp finely chopped glace ginger or vanilla extract.
