Avgolemono (Greek Lemon Chicken Soup)

Preparation time: 40 min

5 Average Rating

This Avgolemono – a classic Greek chicken soup with egg and lemon – is a hug in a bowl. Created by Camellia Ling Aebischer, it's creamy yet light, balancing tender chicken and rice with the brightness of lemon and the silky richness of whisked eggs.

Pro tip: For the perfect silky texture, keep the heat low after adding the eggs so they don’t cook and curdle. Cooking the risoni directly in the soup also adds a bit of starch, which helps stabilise the soup.

Ingredients

  • 1 onion, finely diced
  • 1 Tbsp olive oil
  • 4 cups chicken stock
  • 1 chicken breast, about 200g
  • ½ cup risoni
  • Juice of one lemon, about ¼ cup
  • 3 eggs
  • ¼ cup parsley, finely chopped

  1. Place a large heavy-based pan over medium heat. Once hot, add your onions and olive oil, plus a pinch of salt. Cook until softened but not brown, a few minutes.
  2. Add your chicken stock and bring to a boil. Once boiling, place the chicken breast in the broth, add a lid to the pot, then turn off the heat. Sit for 20 minutes, then remove the chicken breast and set it aside to cool slightly.
  3. Bring the pot back to a boil, then add your risoni. Par-boil, about 4 minutes. It will keep cooking while you complete the remaining steps.
  4. Meanwhile, place the eggs and lemon juice in a large bowl with a wet tea towel or silicone mat underneath to stop it from slipping. Whisk briefly to combine.
  5. Turn the heat down on the soup so the risoni settles to the bottom, then add one ladle (about half a cup) of soup to the egg mix while whisking. This will temper the eggs and avoid splitting.
  6. Add another 1-2 ladles of broth, then pour the egg mix back into the soup pot. Keep the heat very low or off; do not re-boil.
  7. Shred the chicken breast, then add it back to the soup along with the parsley. Serve warm.
