  1. For the sauce, combine the cornflour and soy in a large jug, whisk until smooth. Add the remaining sauce ingredients, mix well and set aside.
  2. Heat a large, wok or non-stick frying pan over a high heat until hot. Add 1 tablespoon of oil and pork mince. Stir fry 4 minutes, breaking up mince until cooked through. Add 3 tablespoons (¼ cup) of the sauce mixture. Stir fry for a few extra minutes until pork is well coated.
  3. Add the carrot, wombok, beans, and green onions. Stir fry 1-2 minutes until wombok is wilted.
  4. Add noodles and remaining sauce. Stir-fry for 2-3 minutes or until noodles are heated through and sauce has coated noodles.
  5. Meanwhile, heat remaining oil in a large, non-stick frying pan over medium heat. Crack the eggs into the pan, fry 3-4 minutes until cooked to your liking.
  6. Spoon Chow Mein into serving bowls, sprinkle with bean sprouts, top with fried egg. Sprinkle with fried shallots. Serve.
