  1. Start by making your Japanese egg mix. Put the soft-boiled eggs, sliced spring onion, mayonnaise, soy sauce, sesame oil and furikake into a bowl. Using a fork, smash the eggs and mix all the ingredients together.
  2. Take two 10cm ramekins and press half of the cooked rice into each ramekin. Use the back of a spoon to push it in firmly. The rice should half-fill the ramekins.
  3. Now top the rice with the egg mix. This layer should be a generous 2cm in thickness.
  4. On top of the egg, spoon half of the avocado into each ramekin. Again, use a spoon to flatten and push the avocado down. You are looking for an even, flat surface.
  5. Add the sour cream on top of the avocado. Again, smooth it out and create a flat surface. Use a knife to spread it all the way to the edges to seal everything in.
  6. Finally, mix the sesame seeds together and spread them on a plate. One at a time, carefully turn each ramekin over and dip the surface into the sesame seeds to create a sesame-crusted top.
