Savoury Eggs
Pea, Mint & Lemon Topping
  1. Blanch the frozen peas for two minutes, and then cool. Once the peas have cooled to room temperature, place them in a blender and blitz to a coarse puree. Add the mint, lemon juice, and mayonnaise and mix to combine.
  2. Spoon on top of half a boiled egg and season to taste.
Tomato & Bocconcini Topping
  1. Layer the sliced cherry tomato on top of the half-boiled egg. Top with the bocconcini halves and drizzle over the balsamic glaze.
Smoke Chicken & Anchovy Topping
  1. Lay the smoked chicken on top of the half-boiled egg. Top the chicken with an anchovy, then garnish with a pinch of fresh chives.
Sweet Eggs
Hot Cross Bun Ice Cream Topping
  1. Remove the vanilla ice cream from the freezer and allow it to soften a little. Just enough to allow you to fold the chopped hot cross buns through the ice cream.
  2. While the ice cream is softening, chop up your hot cross bun into bite-sized pieces and then mix it into the ice cream.
  3. Spoon into the chocolate Easter egg half.
Fresh Berry Topping
  1. Place the fresh raspberries and blueberries into the chocolate Easter egg half. Spoon whipped cream on top.
Rocky Road Topping
  1. Place the mini marshmallows and chopped up red snakes into the chocolate Easter egg half. Drizzle the melted chocolate on top.
