  1. Prepare the custard by adding all ingredients to a small heatproof bowl. Microwave on medium power (not high or the eggs will scramble) for 2 minutes. Remove and whisk.
  2. Return to the microwave and heat in one-minute increments, whisking in between 3-4 more times, until your custard has thickened.
  3. Cover the top of the custard with clingfilm to stop a skin from forming and place it in the fridge to cool.
  4. Prepare the “egg yolk” by adding the mango to a small frypan over medium-high heat with a splash of water. If your mango is especially sour you can add a teaspoon of sugar but even so, the acid is a nice contrast to the sweet custard and cream.
  5. Cook, stirring for a few minutes until the fruit breaks down. Remove and place in the fridge to cool.
  6. To serve, whip the cream, sugar and vanilla in a large bowl using a hand or stand mixer.
  7. Line up four serving bowls (shallow teacups are a great option) and divide the custard across the bottom. Then using half the mango puree, place an even amount on top of each custard layer. Add a generous layer of whipped cream and using a spoon, make a small crater in the centre to house your “egg yolk”.
  8. With the remaining mango puree, use two teaspoons to drop small mounds into the centre of each whipped cream crater. Use a clean spoon to smooth the surface and form an egg yolk shape.
  9. Cover and return to the fridge until it’s time to serve. If serving within the hour, you can leave them uncovered.
