Preparation time: 15 min

4.2 Average Rating

Created by self-professed egg lover and Today Show cook, Jane de Graaff, these Back to School Mini Muffulettas are a clever, make-ahead lunchbox win.

Soft bread rolls are hollowed out and generously filled with pesto, cheese, spinach, ham and a whole boiled egg right in the centre. Pressed overnight and sliced to reveal those beautiful layers, they’re filling, protein-packed and perfect for busy school mornings.

Ingredients

  • 6 eggs
  • 6 bread rolls
  • 12 slices of Swiss cheese, torn into small pieces
  • 12 large spinach leaves, torn into small pieces
  • 12 slices of ham, torn into small pieces
  • 200g of your favourite pesto (recipe uses sun-dried tomato pesto)

  1. Hard boil your eggs for 8 minutes, then crack the shells all over and place them directly into an iced water bath so they are easy to peel. Peel and chill until needed.
  2. Meanwhile, take just the top off your bread rolls and reserve it. Hollow out the roll and press the walls to make them a bit thinner, making a little bread bowl.
  3. Spread a spoonful of pesto all around the inside of each roll, coming up the sides and also covering the inside of the reserved top.
  4. Divide your fillings into 6, and add some of each to each roll. Start with a layer of cheese pieces in the base, then add some spinach. Nestle in a whole boiled egg and tuck the pieces of ham around the edges of the egg to fill the gaps. Then add another layer of cheese and spinach.
  5. Place the top back on the roll and wrap it really tightly in cling film or your preferred wrap, and repeat with the other rolls and fillings until you have 6 egg-filled mini muffulettas.
  6. Place the wrapped rolls into a tray, add another tray on top and weight it down with some tins. Pressing the rolls helps them to hold their layers once cut. Place the tray in the fridge overnight, or until the rolls are needed for lunches. Slice in half to reveal the whole boiled egg centre.
