These Prawn Toast Scotch Eggs combine two favourites in one: crispy prawn toast wrapped around soft-boiled eggs.

Created by home cook extraordinaire Camellia Ling Aebischer, these bites are golden, crunchy and full of flavour – the ultimate indulgent party snack. You can serve these with a little spicy mayo or soy sauce to dip, but they’re great just on their own.

Ingredients

  • 3 eggs
  • 300g raw prawn meat
  • 2 spring onions, roughly chopped
  • 1 clove garlic, finely grated
  • 1 tsp ginger, finely grated
  • 1 tsp sesame oil
  • 1 tsp cornflour
  • ¼ tsp white pepper
  • ½ tsp salt
  • ½ tsp msg (optional)
  • Raw sesame seeds, to coat

  1. Place a small pot of water on to boil. Once boiling, gently lower three eggs in and set a timer for seven minutes. After seven minutes, remove the eggs and place them in a bowl of ice water to stop the cooking and cool.
  2. Meanwhile, in the bowl of a small food processor, place the remaining ingredients except for the sesame seeds. Blitz until combined into a sticky paste. Peel the eggs and set aside. Place sesame seeds into a bowl for coating.
  3. To prep the eggs, wet your hands and place a third of the prawn mix into one palm. Pat it out into a roughly 2cm thick disc, then place an egg in the centre. Mould the prawn mix around the egg and pat until enclosed.
  4. Place the ball into the raw sesame seeds and roll around until evenly coated on all sides. Repeat with the remaining prawn mix and eggs.
  5. For the airfryer, brush each ball with a little neutral oil, then gently place the scotch eggs in the basket of an airfryer. Fry for 15 minutes at 180°C. For the stovetop, place a small pot of neutral oil on medium heat. Allow to heat for a few minutes. It’ll be ready when a piece of bread or potato dropped in turns brown, or the end of a chopstick submerged in the oil releases bubbles.
  6. Gently lower the eggs and cook for 3-5 minutes, until golden brown. Remove and drain on a paper towel.
  7. To serve, slice into quarters and arrange on a platter.
