Satay fried eggs might just be your new weeknight obsession.

Self-professed egg lover and Today Show cook, Jane de Graaff has created something special with this dish. Think: juicy chicken, fluffy rice and eggs fried straight in satay sauce so they’re crispy, golden and coated in peanutty goodness. Add a zingy cucumber salad, a squeeze of lime and a cheeky drizzle of chilli oil, and you’ve got dinner that’s bold, fresh and seriously hard to stop eating.

  1. Cook your rice as per the packet instructions. Meanwhile, make your salad by tossing all the salad ingredients lightly together to combine. Set aside until needed.
  2. Satay: In a small pot, mix together all the satay ingredients except for the lime juice. Simmer gently for ten minutes to reduce by ¼, then remove from the heat and stir through lime juice. Set aside until needed.
  3. Chicken: In a frypan, warm a little olive oil and cook the chicken, browning it all over. Remove the chicken from the pan and keep warm.
  4. Eggs: In the same pan, add ¼ cup of the satay sauce and spread it out to caramelise slightly in the pan. Crack the eggs into the pan and fry them in the satay.
  5. To serve: Divide the rice between two bowls, top each with a sliced chicken thigh. Add a satay fried egg on top and spoon over some more satay sauce. Finish with a drizzle of chilli oil and a spoonful of the cucumber salad.
