Ingredients

  • 4 eggs (1 or more per person)
  • 50g butter
  • 2 x spring onions, white and green parts separated and fine sliced
  • 500g sweet corn kernels, frozen is fine
  • ¼ cup whole egg mayonnaise
  • spices of your choice — I use a pinch of chilli flakes and ¼ tsp smoked paprika
  • ½ tsp crushed garlic
  • 1 cup of your favourite melting cheese, grated

  1. Preheat your oven to 180C.
  2. In a large oven-proof pan melt the butter until bubbling and then saute the white parts of the
spring onion until soft. Toss in the corn and stir until thawed (if using frozen) and bubbling.
Then add in your spices (chilli and smoked paprika) and garlic and stir through the
    mayonnaise.
  3. Remove the pan from the heat and stir through the cheese to begin melting. Then, using the
back of a spoon, create pockets in the sauce and crack each egg into the dish in its own spot.
  4. Cover and place the pan into the oven and bake for 10 minutes — removing the lid for the last
few minutes — or until the egg is set to your liking and the cheese is bubbling and browning.
  5. Serve hot, straight from the pan, scattered with the sliced green spring onion.

Notes

You can also add bacon bits if you’d like to fry them off with spring onion.
