Big Cheesy Polenta Egg Bake

Preparation time: 30 min

Golden, cheesy and utterly comforting, Jane de Graaff’s big cheesy polenta egg bake is the perfect crowd-pleaser. With fluffy polenta, gooey cheese, and perfectly baked eggs nestled on top, it’s a dish that’s as cosy as it is satisfying. This vegetarian bake is hearty enough for dinner, yet just as welcome at brunch or lunch with friends. Serve it up warm, slice into generous portions, and watch it disappear.

Ingredients

  • 6 eggs
  • 1L vegetable stock
  • 2 cups polenta
  • Pinch of salt
  • ½ cup grated cheese of choice (tasty, mozzarella, etc.)
  • ½ cup grated Parmesan - some reserved for garnish
  • ½ cup chopped parsley, green herbs of choice (parsley, dill, basil, chives), reserving some for garnish
  • 2 tbsp butter + extra to butter pan

  1. Grease a baking tray with 1 tbsp melted butter. Pre-heat your oven to 180°C.
  2. In a saucepan, bring the stock to the boil and then reduce to a simmer. Pour the polenta into the stock in a thin, steady stream, whisking to avoid lumps. Once the polenta has thickened, stir through the butter, cheese and chopped herbs.
  3. Pour the polenta into the prepared baking tray and spread it out, then create some dips with the back of a spoon. Bake for 15 minutes.
  4. Crack the eggs into the pockets, sprinkle over the rest of the parmesan cheese and then bake for another 10 minutes or until the eggs are firmed up to your liking. Allow to cool a little before slicing and serving with extra herbs on top.
