These Herby Green Egg Fritters are the perfect fuel for big and little athletes alike.

Created by Today Show cook, Jane de Graaff, this recipe is a versatile at-home meal or on-the-go lunch. Broccolini, herbs and eggs deliver essential nutrients in a tasty fritter form. Stack ‘em sky high and top it all off with an additional delicious poached egg for more protein power.

Ingredients

For the fritters:

  • 180g bunch broccolini
  • ¼ cup fresh dill
  • ¼ fresh mint leaves
  • 3 eggs (+ optional extra eggs for poached egg topping)
  • 1 cup peas
  • ½ cup grated parmesan cheese
  • 3 Tbsp plain flour
  • 1 Tbsp olive oil

For the herby yogurt:

  • 1 cup Greek yogurt
  • ¼ tsp salt
  • 2 Tbsp fresh mint, finely chopped
  • 2 Tbsp fresh dill, finely chopped
  • Juice of ½ lemon

  1. Mix together all herby yogurt ingredients and set aside, chilling, until needed.
  2. Separate the broccolini stalks and tops, breaking the tops up into small pieces.
  3. Place the stalks into a food processor with fresh dill and mint and blitz to finely chop.
  4. In a large bowl whisk 3 eggs, then add the peas, chopped broccolini stalk and herb mix, broccolini tops, grated Parmesan and flour and give it all a thorough mix.
  5. Heat a frypan with olive oil and then add ¼ cup scoops of the fritter mix to the pan and flatten to make fritters. Fry until set (1-2minutes) then flip and cook the other side. Remove to a plate, keep warm and repeat until you’ve used all the batter.
  6. Meanwhile, heat a shallow frypan filled ⅔ of the way with water and bring to a boil. Reduce the heat to very low, and crack your extra eggs in for poaching (1-2 per person), making sure the water comes over the top of the eggs. Cover the pan with a lid and allow to poach for 4 minutes, then use a slotted spoon to scoop the eggs out and rest until ready to serve.
  7. Serve the fritters with the yogurt sauce for dipping and in a stack with extra poached eggs on top.

Notes

These fritters make a great lunchbox filler, sports snack or morning or afternoon tea. They travel well in lunchboxes and can be kept for up to 3 days in the fridge.
