Giant Japanese Egg Sandwich

4.08 Average Rating

This viral Japanese egg sandwich layers baked, boiled and mashed eggs into a single, show-stopping sando that takes the humble egg sandwich to the next level.

Equal parts playful and indulgent, it’s a bold celebration of eggs in all their forms. Inspired by the original internet sensation, we’ve recreated the trend with a recipe that’s as fun to make as it is to eat.

Ingredients

  • 6 eggs
  • 2 slices shokupan bread
  • 2 tbsp mayonnaise
  • Salt
  • Pepper

  1. Preheat your oven to 190 degrees celsius.
  2. Take four eggs and separate the yolks and whites.
  3. Whisk the egg whites until they reach stiff peaks, and then spoon into a cloud shape on a baking tray that is lined with baking paper.
  4. Season the egg yolks with a salt and pepper, whisk them with a fork and then drizzle over the whisked egg white. Now bake the egg whites for approximately 15 minutes. Once cooked, remove from the oven and allow to cool.
  5. While the egg whites are cooking, hard boil the remaining two eggs for approximately 9 minutes. Once cooked, carefully remove the hard boiled eggs and place in a bowl of iced water to cool.
  6. Shell the boiled eggs and cut them in half.  Spoon out the egg yolks and place in a bowl. Now chop up the remaining white of the egg and add to  the yolks. Add the mayonnaise, a pinch of salt and pepper and mix to combine.
  7. To build the sandwich place the cooked fluffy egg whites on a slice of the shokupan bread, and then top with the second slice. Wrap the sandwich in a large sheet of baking or parchment paper, then slice the sandwich in half - making two rectangles.
  8. Turn the two open faces of the sandwich face up. Using a knife, carefully cut a pocket into each half of cooked fluffy egg white.
  9. Take your egg mayonnaise mix and spoon into the pockets that you have just created.
