  • 100g raw prawn meat

  1. In a medium bowl, crack the eggs, season with salt and whisk to combine. Set aside.
  2. Prep prawn meat by slicing each prawn lengthwise to make two flat fillets. You can also chop them into smaller pieces, or leave them whole if you like.
  3. Place a large non-stick pan over medium heat. Add the olive oil and spinach. Season with salt and pepper and cook until wilted, a minute or two.
  4. Set up your serving plates with toast and a side of spinach, ready to receive the eggs because the last cook is very quick.
  5. Wipe out the pan then return it to the heat. Add the butter and prawn meat. Fry until it’s just cooked through, then roughly push some of it to the edge of the pan and add the eggs. Wait a few seconds for a layer of egg to set on the bottom of the pan then using a spatula lightly push it to one side of the pan. Repeat this method, tilting the pan so the raw egg on top runs off back onto the hot pan
  6. Once the eggs are barely set, turn off the heat. Split the eggs into two portions and place them on top of the toast.
  7. Top with spring onion and chilli oil to serve.
