Jane de Graaff’s Savoury Hot Cross Buns are the ultimate Easter remix you didn’t know you needed.

Sweet, spiced buns are transformed into the bacon and egg roll of your dreams. Tangy pickles bring the acid, and melty cheese balances out the stack. It’s the perfect combo of sweet, salty and savoury - a playful, unexpected take on a festive classic.

Ingredients

  • 4 hot cross buns
  • 4 eggs
  • 4 rashers of bacon
  • 8 slices of pickle (or more)

  1. Halve and lightly toast your hot cross buns.
  2. Fry off your bacon until crispy, remove to a plate and keep warm.
  3. In the same pan, fry your eggs in the remaining bacon juices until they are perfectly cooked sunny-side up (to your liking) and remove to a plate.
  4. Build your hot cross buns by adding a slice of cheese to the warm hot cross bun base so that the heat melts it a little. Add some hot bacon on top, and then layer on some pickle slices.
  5. Top it all with your perfect fried egg, and add a crack of black pepper before adding the top of your bun. Serve warm with golden yolk spilling out.
