Serves 6 people
3.8 Average Rating

Created by lunchbox and recipe creator George Georgievski, these Sunflower Wraps turn simple ingredients into a fun, lunchbox-friendly meal. Wraps are sliced and shaped like petals, baked with a bright, yellow egg in the centre and finished with colourful capsicum.

They’re easy to make, and a fun way to get kids involved in weekly meal prep. Pack these alongside fresh fruit, veggies and any other lunchbox faves.

Ingredients

  • 3 medium-sized wraps
  • 6 eggs
  • ½ cup green capsicum, diced
  • ½ cup red capsicum, diced
  • 1 teaspoon salt
  • 2 tablespoons olive oil (for greasing muffin tray)

  1. Cut the wraps into strips about 3cm wide.
  2. Oil the muffin tray and lay the strips into the muffin tray, think big sunflower leaves, and it doesn’t need to be perfect.
  3. Crack an egg into each section over the wrap strips, sprinkle the capsicum around the yolk and season with salt.
  4. Oven-bake for 15 minutes at 180 °C, or air-fry for 10 minutes at 180 °C.
