Preparation time: 8 min
Serves 2 people
5 Average Rating

Kick up your breakfast (or brunch) game with these Chilli Scrambled Eggs, creamy, softly cooked eggs spiked with fresh red chilli and finished with crumbled goat’s cheese. The chilli adds a gentle heat, while the goat’s cheese gives luxurious creaminess, making every bite exciting and comforting at once. Serve them on chargrilled ciabatta with a smear of sweet chilli jam and crisp snow pea sprouts for contrast.

Ingredients

  • 4 eggs
  • 1 tbsp milk
  • 2 tsp butter
  • ½ long red chili, seeded, thinly sliced, extra to serve
  • 50g goat's cheese
  • 4 slices ciabatta, chargrilled
  • 2 tbsp sweet chili jam
  • Snow pea sprouts, ends trimmed

  1. Whisk eggs and milk until combined.
  2. Melt butter in a medium, non-stick frying pan over a medium heat. Add chilli and stir for 10 seconds.
  3. Add egg mixture to pan. Cook for 10 seconds before using a heatproof spatula to continually and gently drag the mixture from the outside to the centre of pan. Cook for 1-2 minutes or until eggs are almost set.
  4. Crumble goat's cheese over the top. Remove from the heat as eggs will continue to cook.
  5. Slide onto plate with ciabatta. Top with chilli jam and snow pea sprouts and serve.
