Egg in Hole Parmesan Crusted Crumpets

5 Average Rating

This parmesan-crusted egg-in-the-hole crumpet is crispy, comforting and effortlessly satisfying. Fried until golden with a crunchy cheese crust underneath, then finished with a perfectly runny egg at the centre, it’s all about contrast in every bite. Endlessly versatile, it’s a go-to recipe that works just as well for breakfast and brunch as it does for an easy solo dinner after a busy day.

Ingredients

  • 2 eggs
  • 2 crumpets
  • 4 tbsp Parmesan
  • 2 tbsp pesto
  • ½ ripe avocado

  1. Using a knife or a circle pastry cutter, cut out a 5cm hole in the centre of the crumpet.
  2. Heat your frypan to a medium heat. Sprinkle the Parmesan into the fry pan and place the two crumpets on the melting cheese.
  3. Crack an egg into each cutout hole and fry until the cheesy base is golden and crispy, and the egg is cooked to your liking.
  4. While the crumpets and eggs are frying, scoop the avocado out of the skin and mash. Mix in the pesto until smooth.
  5. When the crumpets are ready, place them on your plate and finish with the pesto avocado on the side.
