This dish is a pasta lover’s dream!

In this recipe home cook extraordinaire, Camellia Ling Aebischer takes pantry staples to create an easy Lemon Pasta that’s oozing with flavour. Silky strands of linguine are coated in a delicate lemon-butter sauce, creating the perfect balance of creamy and tangy. A touch of garlic and sharp parmesan take this dish to the next level, making it a simple yet elegant meal that’s ready in minutes.

Ingredients

  • 500g linguine
  • 1 lemon
  • 4 eggs
  • 100g parmesan cheese, finely grated
  • 3 Tbsp butter
  • 4 cloves garlic, finely diced
  • Salt and pepper, to taste

  1. Place a large pot of well-salted water on to boil.
  2. Meanwhile, zest and juice the lemon and set aside both separately. In a small bowl, add the eggs and parmesan cheese, season with salt and pepper and whisk to combine.
  3. Once the water is boiling, drop in your linguine, then place a large pan over medium-low heat. Add 2 Tbsp of the butter, grated lemon zest and garlic and toast until lightly golden, a few minutes.
  4. Add the lemon juice to the pan to stop the garlic browning, then add the linguine from the pasta pot using tongs (don’t drain the water). Turn the heat down to its lowest setting.
  5. Toss lightly to coat the pasta, then add the egg and cheese mix. Stir the pasta over a very low heat until the sauce begins to thicken. Be careful not to scramble the egg.
  6. Taste and season with additional salt and pepper if needed. Lemon pasta often needs a bit more salt to balance out the acidity so don’t be afraid.
