Japanese Miso Scrambled Eggs

Preparation time: 10 min
Serves 2 people
4.07 Average Rating

Silky, umami-rich and slightly sweet, miso scrambled eggs are a refined twist on a brunch classic. The white miso paste blends into the eggs for depth of flavour (like salt, but more complex), while a touch of sugar or mirin helps give a glossy, custardy finish. Serve on steamed rice or buttered toast, perhaps with nori or sesame seeds, and you’ve got a comforting, Japanese-inspired scramble.

Ingredients

  • 2 tsp white miso paste
  • 1 tbsp boiling water
  • 4 eggs
  • 2 tbsp milk
  • 2 tsp butter
  • 2 spring onions, thinly sliced
  • 2 slices Japanese milk bread or sourdough (see tip)
  • Shichimi Togarashi Japanese seasoning (see tip)
  • Black and white toasted sesame seeds
  • Shredded nori, optional

  1. Whisk miso and boiling water in a bowl until dissolved.
  2. Whisk eggs and milk until combined.
  3. Heat butter in a medium non-stick frying pan over a medium heat. Add egg mixture to pan. Cook for 10 seconds before using a heatproof spatula to continually and gently drag the mixture from the outside to the centre of pan. Cook for 1 minute.
  4. Drizzle with miso mixture, continue to cook for 1 minute or until eggs are almost set. Sprinkle with onions. Turn off heat. The eggs will continue to cook.
  5. Slide onto plates and sprinkle with togarashi seasoning and sesame seeds. Sprinkle with nori if using. Serve.
