Breakfast Rösti Ring

Serves 15 people
4.5 Average Rating

You know what they say, if you love something why don’t you put a ring on it? A potato ring seems like a pretty fitting proposal when your one true love is eggs.

This hearty, comforting dish by home cook extraordinaire, Camellia Ling Aebischer, brings together crispy potatoes, creamy avocado, and sautéed mushrooms and spinach for a complete breakfast that feels both indulgent and nourishing. Simple to prepare but impressive on the plate, this Rösti Ring is a deliciously unique way to start your morning.

Ingredients

  • 2 large waxy potatoes, peeled
  • 1 tsp olive oil
  • ½ tsp salt
  • 2 eggs
  • 1 Tbsp ghee or neutral oil
To serve:
  • 1 avocado, sliced
  • 2 Tbsp ghee or olive oil
  • 200g mushrooms, sliced
  • 100g baby spinach

  1. In a large shallow bowl, grate the potato. Take a clean tea towel and lay it down. Add the potato to the middle and gather the edges to make a bundle. Squeeze it tightly over a sink or bowl to remove as much water as possible. Place the potato back in the bowl, add the oil and salt and toss well. This is important to help the potato bind when cooked.
  2. Place a large pan over medium heat and add a little oil or ghee. Form two ring shapes out of the grated potato. Cook slowly for 3-5 minutes until the potato starts to turn a little translucent looking.
  3. Slide each ring onto a small clean plate and use that to flip it back over into the pan. Add a little more oil if needed and continue to cook until it’s about three-quarters done.
  4. Crack an egg into the centre of each ring and allow it to cook through, this might take 3-5 minutes so be patient and keep the heat low so you don’t burn the potato.
  5. Meanwhile, in a separate pan, wilt the spinach and mushrooms either separately using 1 Tbsp of oil each, or start with the mushrooms and add the spinach toward the end and combine. Season well with salt and pepper.
  6. Plate up your rosti with a side of spinach, mushrooms, and sliced avocado.
